Baby Beetroot and Citrus Salad w/ Marinated Goats Cheese

Ingredients

30 ml Lirah cider vinegar
60ml Mount Zero mandarin olive oil
Heaped teaspoon of dijon mustard
Pinch Macrobiotic Sea Salt
12 small rainbow beets, scrubbed clean and skin left on
1/2 cup Walnuts roasted
1 mandarin, segmented and skin zested
1/2 Pomegranate seeds
1 orange, segmented
Baby Spinach and Rocket Leaves
 1/2 jar Meredith Marinated Goats Cheese
2 shallots finely sliced
Additional mandarin olive oil for drizzling

Method
Make salad dressing by placing vinegar, oil and mustard in a jar and shake vigorously. Season to taste.
Generously season beets and drizzle with oil. Put in a roasting pan, cover with foil and bake in a 180° oven until soft enough for a knife or skewer to cut through add walnuts to the pan for the last 5mins of baking. once done cut in quarters from top to bottom and douse generously with the salad dressing.
Layer the ingredients evenly across in bowl: leaves, shallots, beets, citrus segments and finally the goats cheese. Drizzle with mandarin oil and zested mandarin, pomegranate and egyptian dukkah. Serve
